Sunshine Ingber Balls

I love ingber, which is a Pesach sweetie made of carrot - now before you scream ‘candied carrots, I am ready to puke!’ Stop and give sunshine ingber balls a chance. They are not hard as rock like traditional ingber, but taste superb!
Ingredients:
- 3 large carrots
- 1 small jar of Acacia honey (or your favourite honey)
- 1/2 teacup of water
- ginger (fresh or powdered)
- caster sugar
NB: If you are making the ingber for Pesach make sure all your ingredients are kosher for pesach (ie buy hechshered honey and ginger powder).
1. Take 3 large carrots and finely grate them.
2. In a saucepan add the carrot and half a small jar of acacia honey and 1/2 a teacup of sugar. Mix well and cook on a medium high heat. Do not add water, you will find a lot of liquid comes anyway.
3. Turn the heat down and allow the mixture to cook until most of the liquid has gone.
4. Take off the heat and add 2 tsps of either fresh grated root ginger or powdered ginger. Mix well again and put back on the heat and cook for another 5 minutes or so.
5. Allow the mixture to cool by spreading it carefully on a flat, shallow dish. After 40 minutes take teaspoonfuls of the gooey mixture and roll into balls in caster sugar; put in small cake papers. Very, very sweet - and deeeelicious!
