Sunshine Ingber Balls

I love ingber, which is a Pesach sweetie made of carrot - now before you scream ‘candied carrots, I am ready to puke!’ Stop and give sunshine ingber balls a chance. They are not hard as rock like traditional ingber, but taste superb!

Ingredients:

  • 3 large carrots
  • 1 small jar of Acacia honey (or your favourite honey)
  • 1/2 teacup of water
  • ginger (fresh or powdered)
  • caster sugar

NB: If you are making the ingber for Pesach make sure all your ingredients are kosher for pesach (ie buy hechshered honey and ginger powder).

1. Take 3 large carrots and finely grate them.
2. In a saucepan add the carrot and half a small jar of acacia honey and 1/2 a teacup of sugar. Mix well and cook on a medium high heat. Do not add water, you will find a lot of liquid comes anyway.
3. Turn the heat down and allow the mixture to cook until most of the liquid has gone.
4. Take off the heat and add 2 tsps of either fresh grated root ginger or powdered ginger. Mix well again and put back on the heat and cook for another 5 minutes or so.
5. Allow the mixture to cool by spreading it carefully on a flat, shallow dish. After 40 minutes take teaspoonfuls of the gooey mixture and roll into balls in caster sugar; put in small cake papers. Very, very sweet - and deeeelicious! :grin:

All of a cleaning frenzy

The past couple of days I have been very busy starting on the cleaning for Pesach (also known as Passover). There is so much to do even before all the mamoth cooking gets under way.

To make things easier I like to use spreadsheets that I save year on year with all the details of cleaning preparations, the shopping, and of course cooking. In years past I remember Mother Of Marge writing out endless lists on notepads, how times have changed and yet stayed the same ;)

At the moment I am concentrating on cleaning the upstairs of the house. This has involved moving cupboards, and piles of books (I am quite the avid reader), and working out how to use the carpet shampooer!

Naturally it is all very tiring but I am making sure I don’t spend all my time preparing for Pesach. Rest assured there will be plently of updates on my garden (the chillis!), and more delicious recipes.
