Perfect for these hot summer days. This dessert is easy to make, uses fresh ingredients, has relatively few calories, & is utterly deliciousness personified (or should that be ‘dessertified?’
Ingredients:
- 3 cups freshly squeezed orange juice
- 2 tbsps lemon juice
- 1 mugful of raspberries
- 1/2 mugful of sugar
- 1 tsp each lemon & orange rind
- fresh mint leaves for garnish (optional)
* Mug is medium sized
Method:
- In a bowl combine 3 cups of freshly squeezed orange juice (do usea juicer, or get someone with strong arms, or someone who wants big biceps to do this for you!), 2 tbsps of lemon juice, 1 mugful of raspberries (put through a mouli to remove the pips, or mash through a fine sieve), 1 tsp each of lemon rind and orange rind, and 1/2 a mugful of sugar (big mug!). Use an electric whisk on a low setting, or a good old mixing spoon – this will give you good biceps!
- If you have an ice dessert maker then pour the ingredients into the machine and follow the manufacturers instructions to complete the ice dessert.
- For the rest of us plebs (!) freeze the mixture in a shallow dish suitable for the freezer (d’oh!) for at least 2 hours.
- Then take the dish out of the freezer and break the mixture up using a wooden utensil. Then with your electric whisk (or Grandma with arm set to no.3!), beat the mixture again until smooth.
- Freeze the mixture again for another couple of hours (pref. longer) and serve with fresh mint leaves if you wish!
- If you are a gutsey Gertie (or it’s a really hot day), you can eat the dessert after the first freezing and first mashing. It will be mushier.
