Shana Tova - Happy New Year!

Sorry it’s a bit late. I was so busy cooking and preparing for Rosh HaShonah (Jewish New Year), that I didn’t have time to post a new year greeting to you all, so here it is - better late than never!

Wishing you all a very Happy, healthy, and wealthy New Year (5768), and well over the fast!

Potato Kugel

This has to be one of the most delicious, easy, and tasty potato dishes you can make. I like to have potato kugel at Yom Tov, and as Rosh HaShonah (Jewish New Year) will soon be upon us I have made a huge kugel in preparation. Here is it straight from the oven! :smile:

Ingredients:

  • 2.5kg Maris Piper potatoes
  • 4-5 tbsps of medium matzo meal
  • 1 tbsp of sunflower oil
  • seasoning
  • 2 medium eggs
  • 1 large onion

Method:

  1. Pre heat the oven to Gas Mark 6 for about 20 minutes
  2. Peel all the vegetables and let them sit in a bowl of water.
  3. Grate all the vegetables and place in a large mixing bowl. If you want really strong biceps you can do the grating by hand, personally I prefer to keep my sanity and use a food processor! :roll:
  4. Add the matzo meal, whole eggs, seasoning (to taste), and oil. Mix all the ingredients well. You can use a wooden spoon if you wish. I like to use my hands it is effective and quite theraputic :wink: In the olden days they used to add chicken fat (known as shmaltz) and not oil, but I think it is kinder the heart to use sunflower oil.
  5. Place the kugel mix into a large baking dish and cover lightly with foil. I used a wide, shallow dish and lined it with foil (to make it easier to remove as I had to use the tray again straight after). If you only have a deep dish this is not a problem just amend the cooking times, see the next point.
  6. Place the dish in the top of the oven and bake for approximately 1 hour. The top of the kugel should be nice and golden brown and the inside should be soft but not raw. You may need to cook the kugel for longer if you prefer it drier, and if you are using a deep dish you will definitely need to cook the kugel for 1 1/2 hours at least.
  7. Serve with roast chicken or a nice meat dish.
  8. This kugel will freeze beautifully. Once it is completely cool, section the kugel into ..erm.. sections and place in freezer bags. You can then defrost and heat up your kugel at your leisure. Enjoy! :grin:
