Flange cakes

Yes, finally after many months here they are flange cakes! Now before you go ‘yer what?’, flanges are popular on the .net forums (just ask Flangey McFlangepants), mainly because I happened to mention that the word ‘flange’ is a favourite of mine – I just like the sound of it.
Anyhoo I was asked many times about a flange cake recipe and at last, I have achieved success. I give you ‘flange cakes’ 
Ingredients:
- 175g (6 oz) wholemeal flour (you can use white if you wish)
- 90g (3 oz) sugar
- 60g (2 oz) ground almond
- 30g (1 oz) dessicated coconut
- 1 tsp cinnamon
- 90g (3 oz) margarine or butter (plus extra for greasing tins)
- 2 eggs
- 50ml (2 1/2 oz) milk
- mini marshmallows
- date purée or jam
Method:
- Pre-heat the oven to Gas Mark 6 (about 200 oC – I think! basically a hot oven) for 20 minutes.
- In a bowl rub in the fat with the flour
- Add the rest of the dry ingredients.
- Beat the eggs and add the milk, combine the wet and dry ingredients together mixing well with a wooden spoon.
- Take a mini doughnut oven pan and grease with margarine or butter.
- Place one soup spoonful of mixture into each ’space’.
- Bake in the middle of the oven for 25 minutes and then allow to cool for 5 minutes at least.
- Go around the edge of the flange cakes with a knife to loosen and remove from the tin.
- Take a little date purée or jam and smooth over the top of half of the upturned flange cakes (this is so you have a smooth surface to work with – the clue is in the word ’smooth’
) - Place marshmallows around the top using the purée or jam to stick them to the flange cake.
- If you like you can place some purée or jam in the centre and stick two marshmallows top and bottom. Then you have ‘male’ and ‘female’ flanges.
- Now what do you do if you don’t have a mini doughnut oven pan? Simply use a bun tray and line with cake papers. Once the cakes are done and cooled down a bit use a teaspoon to carefully remove a bit of the centre of the cake, and decorate as above

- Also you could add food colouring to make the flange cakes any colour you want, possibly something grey or silver to be more metallic. And you could also use raisins or nuts to decorate the flange cake with too. I would love to see your versions of flange cakes too!
