Another Shavuot approaches, can you believe it is three years since I posted my first cheesecake recipe?  This blog has been going for four years now and I am grateful for all your comments and queries (and a special thank you to my host www.redflamemedia.com).

I realise I don’t always update the blog as often as I should *ahem* but I am trying my best to improve on this and hope to add more content more frequently – famous last words

Anyway today I have been busy making cheesecake and quiches for Yom Tov and thought I would try a different recipe for the base, namely a sweet pastry crust instead of crushed biscuit.  It turned out well in the end but I think I should have left the pastry to rest over night instead of just 30 minutes in the fridge!

I found rolling the pastry an impossibility as the mixture was so sticky … and in the end I had to press it into shape in the baking dish by hand!

However all is well and the cheesecake has turned out beautifully, and so on that happy note I would like to wish everyone a very Happy Shavuot
