Fruit Crumble

My childhood is peppered with memories of Mother of Marge making fruit crumble. This dessert is still a firm favourite at Casa Marge. If you like you can make up batches of the crumble bit and freeze it, so when you have some fruit to hand you can whip up a fruit crumble easy peasy!


  • 2 mugs of stewed fruit (apples, pears, apricots – can be mixed with berries)
  • 1/3 mug of sugar (any kind)
  • juice of half a lemon
  • 1.5 mugs of flour (pref. half white to wholemeal)
  • 3/4 mug of margarine or butter (always half fat to flour)

1. Pre-heat the oven to medium for 15 minutes.
2. If you haven’t already stewed the fruit this is easily done in the microwave, or a pan on the stove. Wash your fruit, and peel if the outside is a bit tough, remove core and stones if any. Cut into chunks and poach in a pan of sugared water, on a gentle heat until soft. Or, and this is easiest, bung fruit into a microwave dish with just a little water, no sugar. And cook for about 5 mins on high and 5 mins on low.
3. Whilst the fruit is cooking rub the fat into the flour as in the recipe above, then add the sugar and mix well.
4. In a wide baking dish, place the fruit and then spoon over the crumble mixture, until the surface of the fruit is covered.
4. Bake for about 30-35 minutes depending upon your oven, until the top of the crumble is nice and brown. Serve with custard!
